Is there any way to have items that have been added to discussions show up in the project overview? As it stands, we have to actually go into discussions in order to see if one of the team have added anything.

Adrian,
The recent discussion topics from all projects show up in the Dashboard tab (overview of all projects) in the Projects module. You can click the "(Show More)" link provided beside the Discussion section in the Dashboard to view all the recent discussion topics.
